CAULIFLOWER WITH BECHAMEL

Ingredients for 6 people:

3 tablespoons butter without salt.
1 cauliflower, cut into bite-sized pieces.
2 tablespoons of flour.
2 cups of whole milk, (important that it is at room temperature).
2 cups grated Gruyere cheese.
Salt .
Pepper.
A pinch of nutmeg.
½ cup of fresh bread crumbs.
3 tablespoons grated Parmesan cheese.


Steps to follow:

First preheat the oven to 190-200 degrees and spread the oven with one of the tablespoons of butter. Next, pour water in a large pot and add salt.

Put to heat and when it breaks to boil add the cauliflower. Let it cook for about 7 minutes or until we notice that the cauliflower is at its point.

Meanwhile, melt the remaining 2 tablespoons of butter in a pot, medium size this time, and add the flour. Whisk without stopping and cook for a few minutes the flour to eliminate its flavor. Whisking constantly, add milk in a thin, steady stream.

Cook over medium heat for about 3 minutes more and over low heat the sauce will begin to thicken. We must continue beating until the sauce is soft and at that moment we add the cheese so that it melts. Finally, season to taste with salt and pepper and add a pinch of nutmeg.
