RED CABBAGE AND GOAT CHEESE QUICHE
INGREDIENTS:

1 pastry case
1 red cabbage
1 onion
1 clove of garlic
200 ml. Of liquid cream
3 eggs
goat cheese cut into slices
extra virgin olive oil
salt
black pepper

METHOD:

Chop the cabbage and reserve it. Peel and chop the onion and the clove of garlic, and fry it in a pan with extra virgin olive oil. When the onion is golden brown add the red cabbage and stir well.
Season and let cook for a few minutes, stirring from time to time.
Prepare a mold for quiche and cover with vegetable paper, on top stretch the pastry. In a bowl put the eggs and the cream and whisk. Mix with the cabbage and pour it over the pastry that is in the mold and spread it well.
Put goat cheese slices on top of the mix and place it in the preheated oven at 180º C for 15-20 minutes.
When the quiche is golden brown, remove it from the oven. Wait a few minutes to unmold and serve with a fresh lettuce.
